Ingredients:
- 1 kg of beef (preferably with bones)
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cut into large chunks
- 1 large corn on the cob (choclo), peeled and cut into pieces
- 1 red onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of fresh or frozen peas
- 1/2 cup of rice
- 1 sprig of mint
- 1 sprig of cilantro
- Salt and pepper to taste
- Vegetable oil
Instructions:
1. In a large pot, heat a little oil and sauté the onion and garlic until golden.
2. Add the beef and brown it on all sides. Then, add enough water to cover the meat and add the mint, cilantro, salt, and pepper to taste.
3. Cook the beef over medium-low heat for about 1.5 to 2 hours, until tender. If using a pressure cooker, the cooking time is significantly reduced.
4. Once the beef is cooked, add the carrots, potatoes, and corn to the pot. Cook for about 15-20 minutes until the vegetables are tender.
5. Add the peas and rice to the pot. Cook for another 15-20 minutes until the rice is cooked and the peas are tender.
6. Adjust the seasoning with salt and pepper if necessary.
7. Serve the hot cazuela, making sure to include a portion of meat, vegetables, and broth in each bowl.
